There is not one Catholic teaching or person that ever said Peter began the good work in us, and not Christ.
Is Peter included or excluded in the term, "every man" or does he not fall short of the glory of "let god be true"?
Rom 3:4 God forbid: yea, let God be true, but every man a liar; as it is written, That thou mightest be justified in thy sayings, and mightest overcome when thou art judged.
If God is not a respecter of persons and Peter does not rise above the term "every man", why would we trust his unknown opinion, which can only come from rightly dividing, Christ's words of truth, as the fruit of Peter's labor, which some call infallible?
